الكلمة أمازيغية : إِمْرْڨَازْ ؛ مكونة من جزئين : إِمْ (تحريف ل إِنْمْ و هو القضيب) + أَرْڨَازْ (رجل) لتشابة شكل النقانق مع العضو الذكري.

دخلت الأكلة الى المطبخ الفرنسي و المصطلح الى اللغة الفرنسية (merguez) عبر الجالية الجزائرية الكبيرة المقيمة هناك .

merguez is a red, spicy mutton- or beef-based fresh sausage in Maghrebi cuisine. Since the late twentieth century, it has been popular in France as well.

Merguez is a sausage made with uncooked lamb, beef, or a mixture stuffed into a lamb-intestine casing. It is heavily spiced with cumin and chili pepper or harissa, which give it its characteristic piquancy and red color, as well as other spices such as sumac, fennel, and garlic.

Merguez is usually eaten grilled. Dried merguez is used to add flavour to tagines and couscous. It is also eaten in sandwiches and with french fries.

المَرْڨَازْ هو نوع من أنواع السجق و هو أمعاء غنم أو بقر محشية باللحم المفروم (لحم البقر أو لحم الخروف) و المتبل بالبهارات و الأعشاب و الهريسة التي تجعل لونه أحمر ،يشبه إلى حدّ ما النقانق أو الهوت دوج ، و يمكن أكلها مقلية أو مشوية أصله من المغرب العربي و تحديدا الجزائر و يمكن إضافته إلى الكُسكُس.

أي أعطيني 1 كيلوغرام من النقانق أو السجق.

- يما شواتلنا المَرْڨَازْ فالعشا.
أي أمي شَوَت لنا النقانق في العشاء.

Saucisse , merguez
La merguez est une petite saucisse rouge épicée du Maghreb, d'environ deux centimètres de diamètre et d'une quinzaine de centimètres de longueur, à base d'un hachis de viande (de bœuf et/ou de mouton) et de condiments introduits dans de l'intestin grêle de mouton, et qui se consomme grillée ou frite.
